Chef Avery Hardin had a love of cooking from an early age. When he was around 5 years old – before he could use a knife or the stove – he was allowed to open a can of tuna and he would make himself tuna sandwiches. He would always put a potato chips on the sandwich.
As his palate evolved, so did this sandwich. Now, about 35 years later, the sandwich Avery has been making since he was 5 years old has evolved into Captain Rick, the name of the tuna salad sandwich that is the only sandwich that is always on the menu at Layers Green Lake.
The name of the sandwich comes from the captain of the boat where Avery sources his tuna from. Sacred Sea Tuna is line-caught tuna from Oregon, and that's the tuna that is used in this sandwich.
