Thank you to Dustin Riggs for inviting me into the kitchen on what was actually a pretty busy Monday! I landed in Seattle and then headed straight to Peloton Cafe and Bike Shop.

The loaded vegan breakfast sandwich really is loaded with deliciousness. We're talking vegan aioli and a lemon tahini sauce, crispy hash brown, avocado, arugula, tomato, red onion, and three thick slices of tofu bacon. You can opt for vegan sausage, but tofu bacon is the move here.

The great thing about this breakfast sandwich is after you eat one it doesn't weigh you down for the rest of the morning since it is mostly vegetables.

And yes, this is a bike repair shop with a cafe in it. Maybe when you watch this episode you can tell there was a table of 8 people having a great time just feet behind the camera. Maybe you can't. Maybe now you notice the background chatter.
